District Transitions to Healthier Cooking

Lakeside Union School District (LUSD) continues to transition away from pre-packaged processed foods to more foods prepared with fresh ingredients. This year, LUSD added entrees made with fresh ground beef and fresh chicken quarters; baked goods such as coffee cakes, breadsticks and rolls; and expanded salad bar offerings including fruits and vegetables from their first Farm to School partner. LUSD staff practiced their cooking skills during Professional Growth day by preparing stuffed chicken breasts, two types of salads, French baguettes and apple crisp. In addition, Child Nutrition Lead, Chef James Dumars, received a Nutrition Recognition Award from the California School Nutrition Association for his work in this field.
